Mr. Hank's Corner 6/4/18



As we creep into summer we get to enjoy so many amazing crops at this time of the year that are plentiful this time of the year. Some of my favorites include cherry tomatoes, squashes, squash blossoms, peppers, fruits such as peaches and plums and of course like we spoke about last time strawberries. Well, I had a few people ask about a summer fresh fun strawberry and other berry type of recipes that would go great with grilling and chilling by the pool. I love watermelon on the grill cut into large chunks seasoned with chili powder because the sweetness of the watermelon just mellows out the spice. But to really chill out make a popsicle. I put this together for a class size or a large party for you and your family, neighbors and friends. These are from Walmart and make it fun to eat something healthy and easy but something with flavor. Others have used small dixie cups and popsicle sticks from the art store and this seems to work as well. It is up to you. Here is the recipe:

This will make 30 popsicles:

  • 9 cups of strawberries pureed to about 4.5-5 cups

  • 6 tablespoons of honey

  • 2 tablespoons of lemon juice

  • 9 cups of blackberries or 2 pints may work for the amount or blueberries

  • Greek yogurt (optional)

In a blender puree strawberries with 3 tablespoons of honey and then put aside, next do the same with the blackberries or with blueberries add a little lemon juice as well.

In a popsicle mold layer strawberry puree then Greek yogurt followed by blackberry or blueberry puree.

Place in mold and let sit for 6 hours in freezer.

Try to make this summer a healthy and fun one for you and your family. It is easy to put forth your health when you are down at the pool from making flavored water to these simple popsicles. Enjoy.
